Spinach Breakfast Pizza

Last night we enjoyed a delicious Spinach Breakfast Pizza for dinner.  For the crust, I used the first recipe here:  Breadbeckers

Spinach Breakfast Pizza

  • Pizza Crust

  • 8 Eggs

  • Box of frozen Spinach, thawed & drained

  • Medium Onion

  • Shredded Cheddar and/or Mozzarella

  • Small amount of white gravy (I use flour made from white beans and milk) optional

  • Salt & Pepper

  • Fresh Tomatoes optional


Once the dough was prepared and on the pan, I went ahead and put it in the oven to lightly bake (pretty well done but not browned).  Meanwhile, I sauteed 1 onion. Add spinach when onion begins to get soft. Be sure to add some salt and pepper to the spinach and onion.  Beat eggs thoroughly and season them as well.   Then pour the eggs into the spinach.  Scramble until eggs begin to set.

I used a small amount of white gravy as the sauce. You could skip this or use gravy however you like to make it. If you have a grain mill, then just throw a couple tablespoons of whatever white dried beans you have in it to make a white bean flour. Mix it with cold milk and heat. Again season.  This makes a great, simple and healthy white gravy.

So spread the gravy on the crust. Then spread the egg spinach mixture over the gravy.  Then put the amount of cheese you like over that. I used a combination of cheddar and mozzarella.  Bake in a 400° oven until cheese melted and looking yummy.  For a wonderful garnish, cut thin slices of fresh tomato and put on right before serving.  I also served fresh ground grits in little bowls beside the pizza. It looked beautiful and was really good.
